    A neutral base, Rich’s Cremagic is ideal for making your recipe of truffle. It doesn’t scorch on heating and doesn’t split on adding citrus fruits / juices. Making colored and flavored truffle has never been easier!

       TIPS & HANDLING

     

    • Arrives frozen.

     

    • Store at -18°C or below.

     

    • Thaw under refrigeration (+2°C & +7°C) for 24 - 36 hours before use.

     

    • Shake well before opening Rich's Cremagic & and weigh the product in a sauce pan

     

    • Heat Rich's Cremagic® on medium heat until it comes to boil

     

    • Stir well until all the chocolate melts and dissolves to give a homogenous truffle.

     

    • Preferably pass the mixture through a soup strainerto remove any lumps.

     

    • The truffle needs to be rested 12 hours at below 25°C to set.

     

    • Use on cake as any other chocolate truffle.

     

    • Can be heated to maximum of 45°C for application purposes.

     

    • Unused product must be refrigerated and can be frozen.
